Ingredients:
Achinga(Long runner beans/Payar) – 250 gm
Coconut – ½ of one
(grated)
Onion – ½ cup
Or
Small onions(Kunjulli) – ½ cup
Green chillies – 3 nos
Turmeric powder – ¼ tsp
Curry leaves – A few
Salt – As reqd
Coconut oil – 2 tbsp
Mustard seeds – 1 tsp
Dry red chillies(Vattalmulaku) – 2 nos
Method:
1)Chop finely the beans, onions and green chillies.
2)Grind together coconut, turmeric powder, green chillies and curry leaves into a coarse form.
:- Do not add water while grinding.
3)Mix together the chopped items along with the coconut mixture and salt.
4)Heat oil in a pan or a kadai.
5)Splutter mustard seeds and sauté dry red chillies and curry leaves.
6)Add the beans mixture and mix well.
7)Sprinkle a little water on top and cover it with a lid.
8)Cook on a low flame for about 3 – 4 mins.
9)Remove the lid and continue cooking till done on a low flame itself.
